I’ve been doing my best to snack a little healthier lately. I really enjoy a handful of chilli roasted squash seeds which I’ve been livening up with a little lime zest, but they don’t quite do the trick when what I’m really craving is carb heavy beige food, like chips.
My answer to that is Aubergine Fries. They’re crispy, perfect for dipping and can take a hefty amount of whichever spices you choose. Oh, and they aren’t bad for you!
They’re really simple to make:
Preheat the oven to 210 degrees Celcius. Line a large baking sheet with greaseproof paper or a reusable liner (honestly, those things are great).
Mix the flour and cumin in one bowl and beat the eggs in another.
Cut an aubergine in to 1cm thick slices, then lay each slice flat and cut in to batons.
Dip each ‘fry’ in the flour, then the egg, then flour again.
Arrange on the baking sheet and bake for 15 minutes, turning half way.
Meanwhile, you can whip up a little dip. A teaspoon of harissa mixed in to a tablespoon of Total Greek or natural yoghurt is the perfect accompaniment. If you’re a keen calorie watcher, Total’s 0% Fat Greek Yoghurt would work well.
