As you know, my health has been in the bin over the past four years. I’ve tried all sorts of drugs, treatment and trials to no avail. It’s come to the point where I’m not expecting a cure or a treatment. I can’t put my hopes on my Doctors fixing me; I’m going to have to focus on looking after the basics.
There comes a point where you just have to accept that you only get out what you put in. If I’m not giving my body the best sustenance, I can’t expect the best out of it. This kind of thinking has got me and my boy on the Paleo diet. This isn’t a “lose weight” diet, nor am I kidding myself that it is going to be a cure. This is a lifestyle change that should help my body to be the best it can be given the circumstances.
In a nut shell, you cut out sugar and starchy foods like pasta, rice, oats. You don’t measure or weigh things, there are no points, just plenty of meat, veg and fruit. To me, that’s pretty easy to work with. My head is filled with recipes I can’t wait to cook, but I wanted to start with this one:
Start with cutting the parsnip up in to even chunks. Boil until tender and mash with a little milk.
You’re done. Plate that baby up! I also served mine with green beans. If you have any salsa verde left over, you can keep this in the fridge for a week. This meal is so simple but is guaranteed to impress your dinner guests or just as a mid week treat.
