This week I’ve mainly been swooning over gorgeous raspberry recipes and foodie photos. Bit late for raspberries you say? Well not necessarily. Some varieties will keep them coming until late Autumn and with the way the weather has been this Summer, fruit is doing it’s own thing anyway.
At the back of our old house we had a row of raised beds planted up with strawberries, raspberries, gooseberries and blackcurrants. You’d think having such a fresh supply would be amazing in summer, but that wasn’t my favourite time to eat them. My Mum would pick them all and freeze them in batches, ready for a fruit crumble, pudding or quick fruit coulis.
Here are a few of my favourite fancies, let me know if you try them!
P.S. If you don’t scoff them all at once, Raspberries freeze really well. Just wash them and box them up.
