I’m a lady of little energy these days so “throw it all in” recipes like this one are my saviour. I particularly love the texture of these little beauties and dare you not to love them too.
Makes 16 small muffins
For the muffins:
250g self raising flour
1/4 tsp salt
4 ripe bananas
110g butter
165g dark soft brown sugar
2 eggs
For the streusel:
2 heaped tbsp butter
20g flour
20g icing sugar
1/4 tsp cinnamon
Preheat oven to 175C. Line a cake tin with cake cases (I’m using silicone ones)
Weigh out your sugar, flour, butter and salt together in one medium-sized mixing bowl.
Gradually add chunks of banana and both eggs whilst whizzing with a blender, I use a handheld.
When the mixture is well combined and holding lots of air, spoon in to cake cases, 3/4 full
To make the streusel, combine all the ingredients in a small bowl and rub between your fingers until crumbly (if it’s a bit sticky just add more flour). Sprinkle on top of the muffins.
Bake in the preheated oven for 25 minutes.
