Upstairs in our house right now is chaos. Our bedroom renovation is nearly over and a carpet fitter is here hammering grip strips around the edge of the room. I’m using this time to distract myself by sharing this raspberry lemonade recipe because I’ve never bought a carpet before in my life, and to tell you the truth I’m nervous about it!
We’ve torn the room back to bare walls, had it replastered, rewired, the door stripped, everything repainted and this is the final step before we can shuffle our furniture back in and call it a bedroom again. Phew!
Before I spend any more time worrying about the colour choice, let’s concentrate on this refreshing beauty:
How is that for a distraction? Raspberry lemonade is one of the most zingy, refreshing, pick me up drinks you could possibly concoct. The colour reminds me of gorgeous summer sunsets and even just looking at it I can picture myself sat in the sunshine with a nice cold glass. This is a non alcoholic option, but if you wanted to, this drink could be spiked with vodka for something more naughty.
There are two ways to make this: the real deal or taking it easy by using some Vita Coco Lemonade. I love it either way, but being able to make something this fabulous from a carton drink is a great trick to have up your sleeve if you find yourself with guests at short notice. They’ll never know!
- 1 Lemon
- 1 handful Raspberries
- 330ml Lemonade (Homemade or Vita Coco lemonade)
- Juice of 1 Lemon
- 40g Sugar
- 330ml Water
- Using a blender, pulse the raspberries. Pour through a sieve in to a jug to remove seeds.
- Slice the lemon thinly and add to jug, pour over the lemonade and leave to infuse for 15 minutes.
- Serve in tumblers over ice.
- Combine the ingredients, stirring until the sugar dissolves.
