Well hello spring, it’s been a while! I’m celebrating with a seriously refreshing juice recipe, designed for sipping in the sunshine on the warm days that are heading our way.
It’s a very rare member of the green juice family that doesn’t look like swamp water. They’re an endangered species, I tell you! This juice tastes so fresh and vibrant that I could drink it day in, day out. I actually make mine in a Nutribullet now, so it isn’t strictly juiced, but it’s equally awesome.
Matt is having an operation on his knee this Monday so I’ll be whipping up juices and good healthy healing food to help him recover. I imagine being on crutches and strict orders to rest will drive that man of mine insane. Hopefully this one procedure is all he needs and he can get back to running and I can crack on with plans to decorate my office with some man power.
- 2 Apples
- ½ Cucumber
- 2 sticks of Celery
- 1 Lime
- 100ml Vita Coco natural coconut
- Core the apples and cut the peel from the lime.
- Feed the apples, cucumber, celery and lime in to the juicer on it's slowest speed.
- Thin out the resulting juice with the coconut water.
The recipe and gorgeous photo are from the campaign I worked on with Vita Coco last year. Now, I’m not supposed to have favourites, but if I had to pick a job that I’ve enjoyed more than most, it was this. That might have had something to do with the addiction I developed to their Cafe Latte..
