This weekend was Mother Higham’s Birthday. I shan’t disclose the precious digits, but whilst it wasn’t a “special” landmark, I still wanted to do something nice for her because she does such a lot for Matt & I.
Between us, we quickly decided the best thing we could do would be to cook everyone a meal. At first we were thinking something like a picnic, or tapas but I didn’t fancy being stuck in the kitchen making so many different attributes.
On the hunt for something simple, but occasion worthy, I stumbled upon Gordon Ramsey’s stuffed roast chicken. A paprika roasted bird, stuffed with a Mediterranean inspired concoction of sun-dried tomatoes, chorizo and cannellini beans.
I apologise now, for the photos that follow. I didn’t want to keep a full table waiting whilst I took photos to show you guys, so I took a quick snap and served it up. Giggles were had as I did my best Ramsey impressions.

Not even my best photos would do this meal justice though. I laid the moist, spicy chicken on a bed of the softened rich stuffing, served with green beans, garlic roasted new potatoes and just a drizzle of the lemony gravy. One happy, full family.

The recipe it’s self will be very easy to prepare for most, I wasn’t in my best state so Matt played sous-chef and helped with pretty much everything. In fact, I’m not sure what I actually managed to do on my own other than direct. One of those days.
Tomorrow I’ll follow this up with the dessert I made; maple caramelised peaches in a filo parcel, then I promise to get back to half decent photos for you all.
