After my hospital stay (more about that in my next post) I really need to focus on getting some good food inside me and building my strength up. I’ve been on the look out for some recipes with lots of healthy fats in and this idea really caught my eye.
The photo really doesn’t do this justice but it felt like a real lunch time treat and certainly a recipe I’ll be coming back to for Summer time breakfasts.
All you need is an egg and an avocado.
Split an avocado in half and remove the seed. Crack an egg in to a separate bowl.
Scoop out a little of the flesh and divide the egg between the two halves. As you can see, I went for egg whites in one, yolk and a bit of white in the other.
Steady in tinfoil “nests” and place inside a baking tray and season.
Bake at 175 degrees for about 10mins or until the whites are cooked through.
You’ll know you’ve mastered it when your yolk is still lovely and gooey.
This unusual way of cooking an egg comes a close second to the wonderfully fluffy Nid d’oeuf.

That sounds like a lovely idea, I’m trying really hard to imagine what it tastes like, but I love egg and I love avocado, so this is bound to be a winner.
