Tirimisu baked french toast

- 400g Brioche
- 150g Mascarpone
- 1 egg
- 3 Tbsp sugar
- 50g chocolate chips
- freshly brewed strong coffee
- cocoa powder to dust
- Thickly slice the brioche and lay in an oven proof dish.
- Whisk together the mascarpone, egg, sugar and chocolate chips.
- Let the mixture down with strong coffee until it is the texture of double cream.
- Pour the mix over the brioche and leave to soak for 15 minutes.
- Preheat the oven to 190 degrees.
- Bake for around 25 minutes or until the bread is golden and the mixture is set.
- Dust liberally with cocoa powder and serve straight away with plenty of hot coffee.
