Courgette waffles

Ingredients
  • 350g Courgette
  • ¼ tsp Salt
  • 2 Eggs
  • 1 Tbsp Plain flour
  • 75g Cheese, grated
  • 2 Spring onions, finely sliced
Method
  1. Grate the courgette and place in a bowl with the salt. Mix together and set aside for 20 minutes.
  2. After 20 minutes the courgette will have released some of it's moisture. Place the courgette in a clean tea towel and squeeze out the remaining liquid.
  3. In a clean bowl, whisk together the egg and flour.
  4. Add the cheese, spring onion and courgette then season and stir to combine.
  5. Add a heaped tablespoon of batter to each waffle slot and cook for 5 minutes, or until the waffles are cooked through and the outer edges are a golden brown.
Notes
I normally use mild cheddar in this mix but any hard cheese would work well. Feta, halloumi, smoked cheddar...

Try experimenting with the batter mix. Chilli flakes, paprika, mint, pesto or harissa would instantly change the flavour.
