Baked penne topped with sausage & focaccia croutons

Ingredients
  • 300g Pasta
  • Focaccia chopped in to squares (I tend to buy one, cut off what I need and freeze the rest)
  • 3 sausages
  • 1 jar of sauce (I'm using Arrabbiata)
  • A handful of cherry tomatoes
  • A handful of parsley
  • 150g Mozzarella
Method
  1. Preheat the oven to 180 degrees Celcius.
  2. Part cook your pasta so that it's softened but still has bite.
  3. Whilst that's going, remove the skin from your sausages and crumble the meat in to a frying pan, just to brown it.
  4. Drain the pasta and stir your sauce through along with the chopped tomatoes, sausage and anything else in your fridge that you fancy.
  5. Add to an ovenproof dish and top with chopped parsley, mozzarella and the focaccia.
  6. Bake for 15mins or until the cheese has melted and has started to turn golden.
