Serves: 4

Ingredients
  • 400g Spagetti
  • Extra virgin olive oil
  • 2 garlic cloves, minced
  • ½ tsp chilli flakes
  • 1 bunch parsley, chopped
  • 6 courgette flowers, shredded
  • Parmesan to serve
Method
  1. Follow the packed instructions, cook the spaghetti in salted water until al dente.
  2. In a separate pan, heat a table spoon of good quality olive oil and fry the garlic and chilli flakes until the garlic begins to turn a light golden colour. Turn the heat off.
  3. Drain the spaghetti, reserving a little of the water. Add the spaghetti to the pan with the garlic and chilli in, along with the courgette flower and parsley. Toss together until well combined, adding a splash of the reserved pasta water to loosen it a little. Season with plenty of black pepper.
  4. Serve with a glug of olive oil over the top and a grating of parmesan.
