Polish Kolaczki

Ingredients
  • 115g Butter
  • 115g Cream cheese
  • 125g Plain flour (plus extra for rolling)
  • 65g Icing sugar
  • 8 tsp Jam, marmalade or curd for filling
Method
  1. Cut the butter in to cubes and place in a large bowl, along with the cream cheese. Mix together with a wooden spoon until well combined.
  2. Sift in the flour and icing sugar, stirring it in to the mixture.
  3. Once it has started to come together as a dough, tip out on to a lightly floured surface and need until smooth. If the dough feels sticky, add a little more flour.
  4. Wrap in clingfilm and refrigerate for 30mins.
  5. Preheat the oven to 170? (325?, gas mark 3 )
  6. Roll out the pastry until around 3mm thick then cut in to 8cm squares.
  7. Place the squares on a lined baking sheet.
  8. Make a 2cm diagonal cut on each corner.
  9. Add around half a teaspoon of jam to the centre of the squares.
  10. Fold in one piece from each of the cut sections towards the centre to form the pinwheel.
  11. Bake for 10 minutes or until lightly golden on the tips
  12. Transfer to a wire rack to cool.
Notes
I haven't tested this recipe with low fat cream cheese so if you try it, please let me know how you get on. I imagine you may need to add more flour.
