Ancho Prawn Tacos

- 240g Shelled king prawns
- ½ tbsp cornflour
- 2 tsp ground ancho
- 1 tsp cumin
- ¼ tsp salt
- 1 tbsp oil
- 1 avocado
- 1 small bunch of coriander, stems removed
- Juice of 1 lime
- 1 jalapeno, seeds removed.
- Add the ancho, cumin, salt and cornflour to a bowl mixing until well combined.
- Roll the prawns in the mixture to coat them.
- Fry in 1tbsp of oil over a medium heat until the prawns are pink and opaque.
- Serve in warmed tortillas with your favourite taco toppings.
- Add all the ingredients to a blender and pulse until smooth.
- Drizzle over tacos.
