Ancho Prawn Tacos

Ingredients
Ancho Prawns
  • 240g Shelled king prawns
  • ½ tbsp cornflour
  • 2 tsp ground ancho
  • 1 tsp cumin
  • ¼ tsp salt
  • 1 tbsp oil
Avocado Coriander Sauce
  • 1 avocado
  • 1 small bunch of coriander, stems removed
  • Juice of 1 lime
  • 1 jalapeno, seeds removed.
Method
Ancho Prawns
  1. Add the ancho, cumin, salt and cornflour to a bowl mixing until well combined.
  2. Roll the prawns in the mixture to coat them.
  3. Fry in 1tbsp of oil over a medium heat until the prawns are pink and opaque.
  4. Serve in warmed tortillas with your favourite taco toppings.
Avocado Coriander Sauce
  1. Add all the ingredients to a blender and pulse until smooth.
  2. Drizzle over tacos.
