Cider jellies

Ingredients
  • 1L Cider
  • 10 gelatine leaves
  • Fruit to serve
Method
  1. Place the gelatine leaves in a bowl and cover with cold water to allow it to 'bloom', this will take around 5 minutes.
  2. Whilst waiting for the gelatine to bloom, pour half of the cider in to a pan over a low heat. Do not allow the liquid to boil.
  3. After 5 minutes or so, the leaves should be wrinkled and have expanded.
  4. Remove the leaves from the water and add them to the warmed cider. Take the pan off the heat and stir until the leaves have dissolved completely.
  5. Add the remaining cider to the pan and stir to combine.
  6. Pour the mixture in to jars, glasses or jelly moulds then transfer to the fridge to set for around 4 hours or until firm.
  7. Once set, top with fruit to complement the flavour of the cider you choose.
Notes
The ratio of gelatine leaves to liquid in this recipe is 1 leaf per 100ml liquid. Please do check the recommended ratio for the gelatine that you purchase as some are different. You should be able to find the quantity needed on the packaging
